Week 16 Report

I made my video on Monday but I forgot all about posting it until today.  Oops!  Busy week!  Isn't it always?!

As I report on my video, I was down 4 pounds at my Sunday weigh-in.  I was excited to get that vacation weight gain off plus a little extra.  My food was delicious and filling last week, even though I cut out flour products.  I focused on adding a lot of vegetables to my meals and limiting the number of times I eat a day.  I definitely wanted to eat more often, but I just tried to stay busy.  I say all of that in the video though, so why don't I quit talking and post a few food photos:

Love it when my grocery cart looks like this!

Lots of salads this week.  I included a big salad with most lunches and dinners.

Plant-based/Vegan Augratin potatoes and steamed broccoli

Love this mix from Trader Joe's when you need whole grains in a hurry--3 minutes in the microwave.

Hawaiian Haystacks with the rice medley shown above, vegan cheesy sauce,  romaine and spinach, red peppers, celery, green onions, pineapple, unsweetened coconut, slivered almonds.  I loved this so much, I ate two big plates of it and I was super stuffed.  One plate next time! :)
I have oatmeal for breakfast almost every day, but I changed it up one day with only half my serving of oatmeal (ha, ha, I couldn't give it up entirely), and half a baked sweet potato pan-fried with vegetarian sausage and sauteed spinach.  Yum!

Brown rice topped with chopped spinach, sweet potato, black beans, red peppers, tomatoes, cilantro, homemade jalapeno hummus, and vegan sausage again.  Yep, I was crazy stuffed after one plate of this.

Lentil Loaf, mashed potatoes with mushroom gravy, broccoli, and sauteed squash.

I was able to go to Whole Foods Monday night and meet Rip Esselstyn, one of my great inspirations on my plant-based journey.  Check out his Engine 2 Website HERE.

I snapped a couple photos of myself this morning so I could have a full body shot to compare to down the road.  I failed to do that at the beginning!

  1. Yay for a great week! Congratulations! Do you think cutting out the flour helped you? I find that now I don't eat flour that I just don't get the cravings for that type of food anymore. You are so smart to do your before pics. Of course I have pictures but not a true before pic and now I wish I did. I just didn't trust that I'd be able to lose weight. I think it is OK to feel full or hungry if you are measuring your food (whatever method you use to measure is good). Sometimes I do feel over full but I know I'm getting the right amounts of the right types of food. Sometimes I'm hungry too and I just remind myself I won't starve between meals and drink some lemon water! I know Susan PT talks about these feelings in our body and to teach ourselves to just let the feelings come and then to let them pass. It helps me. I don't eat from after dinner - usually 6pm until 8 or 8:30 am and sometimes I'm really hungry but it all works out! Breakfast always tastes so good. I too set my original goal high and when I reached it I just kept going - I bet you will too! I'm about 6lbs to my goals but I wonder if I another 11 would be more appropriate for my body. We'll see. I'm gauging how I feel and decided what my right sized body is. Maintenance scares me too. It's for life while the weight loss journey has momentum - albeit slow - it's a work in progress while maintenance is forever! Love ya! You've Got It!

  2. Cherilyn, you are the best for checking into my blog each week! It makes it matter more somehow, knowing at least one person will read it! :) Yes, cutting out flour definitely helped. Not only did it reduce cravings, it eliminated all kinds of difficult food choices because the choice was already made. That being said, I didn't give it up forever as you'll see in the blog I posted today! As of now, I'm still making room for it in my life, but that could change in the future. Yes, not eating after dinner or between meals is an adjustment, and Susan PT's words on dealing with that have been immensely helpful. Ha, ha, not that I'm committed to the no snacking thing, but it really helps me to not snack when I want a snack but know I don't really need it, or when I'm hungry at night. I know I won't starve and another meal is around the corner. :) Way to go on being so committed to BLE! For whatever reason, I just have to do my own thing!
